Subject: Sinnamon Apple Muffins

1 and 1/2 cups quick cooking rolled oats
1 and 1/2 cups boiling water
1 cup whole wheat flour
1/2 cup all purpose flour
3/4 cup brown sugar -- unpacked
1 and 1/2 tsps. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1/4 cup honey
1/4 cup unsweetened applesauce
2 egg whites
3 Tbsps. butter or margarine -- melted
1 tsp. vanilla
1 and 1/2 cups peeled -- cored and finely
chopped apples
Cinnamon-Sugar mixture for sprinkling (
optional )

Preheat oven to 325=B0F Pour boiling water over oats in a=20
medium bowl. Stir and let stand for 20 minutes.
Combine flours and next 5 ingredients in a large bowl
and set aside. In a small bowl, whisk together honey,
applesauce, egg whites, butter and vanilla. Add applesauce
mixture to oats and stir until smooth. Add oat mixture to
flour mixture and stir until dry ingredients are moistened.
Fold in chopped apples.
Spray muffin tins with nonstick coating spray or use paper
liners. Evenly divide batter among 12 cups. Sprinkle each
muffin with cinnamon sugar, if desired. Bake for 25 minutes,
or til toothpick tests clean. Remove from pan and cool.
