You have a lot of good questions! My advice is to study as much as possible, and practice them with as many people as possible. Jim has a lot of vison, perception, etc ideas and websites on his website. Think on the macro scale with these concepts. They extend further than the combative aspects. For example, if you had to get someone to move out of your way without touching or speaking to them in public, how would you do it? To relate this to combat, imagine if you need an opponent to move over two steps to setup a power blow... Everything you do can be related to your everyday life. This means that you practice 24-7!!
To answer your questions regarding using a second knife a a deterrent...sure! If you can do it with your hands, you can do it with an extension to your hand. Once you get to see some examples of how this plays out, you'll be amazed with the concepts it brings or integrates with hand to hand, whip, dagger, etc. Have you been to a Riddle or Bowie Seminar? If not, these are highly suggested! ALL of my knife skills have been learned from Jim and the Comtech crew through these seminas and practice. Jim has another seminar that I believe has only been ran one time through called "Master Plays" or something to that effect. This one covers what we are speaking about now. A lot of the moves that I saw had to do with deception and science (what the body sees, hears, responds, etc) and uses it against the opponent. If nothing else, go to the bowie seminar and have some fun. You will enjoy sparring with others and seeing the styles that others have. It is also a good time to practice your deception tactics.
