I always thought you had to rinse the brine off from time to time, but from what I am reading here it isn't necessary, just let it sit to taste. Is sauerkraut something you do seasonally? The reason I am particular about food storage is that I believe in it but have to adapt some things for my family, as well as make it taste good.

How does your product compare to a commercial brand? I haven't tasted any that I liked...too bitter as opposed to sour.

Do you make vinegar?

I have issues with powdered milk; long story short my parents ended up with some WWII and Korean War surplus
in the sixties and we got to drink that to save money...
to this day powdered milk is 'used' but far and few between...and I do want to get better at using it, but
just haven't gotten up the courage...

Sigh.
