Well IMO theres no exact way or specified way to tell if a puppy is going to turn out to be what each individual wants.
However, what i personally do is interact with them one on one and add diffrent stressors/stimuli and see how the puppy handles the situation.

Take for instance, during play, is the puppy being dominant to me? Is the puppy showing any signs of agression or scared and wanting to hide.

Another thing is dropping something randomly to make noise. Whats the pup do? Does he/she run and hide? or do the startle but go to see what the problem is and what caused the commotion.

Taking them in a public place and letting them meet other dogs. Thats another way to get an idea of how the puppy handles the situation.
