The terrain you describe is perfect habitat for cats of all species. We have Bobcat and Puma both around here in S.E. Kansas. It's heavily forested river bottom with the kind of rocky overlooks you mention. Luckily a cat is shy and reclusive by nature. They are far more frightened of you than you of them.
In so far as your dogs handling them, I wouldn't bet on it. I can't see a fight unless the cat is cornered and what the cat gives up in size and strength he gains in speed and better equipment. Nobody would come out smilin' in that sort of a fracas! Lol
