Paul did not have time to ever complete the mentat training, since his father was murdered and he had to flee into the desert. He didn't have "other memory" to learn from either. But, his own talent made it a moot point anyway.
I sort of think of it as analogous to Bruce Lee learning basic wing chun from Yip Man, then realizing that his own potential extended way beyond that, so he quit and created Jeet Kun Do, becoming the greatest kung-fu figure in history. Paul was also wildly gifted. To put it another way, his mentat training really was kind of like teaching a baby who will grow up to be an Olympic sprinter how to walk. You show them the basics, but they do the rest themselves.
I think the scene in the desert when he is figuring out how he and Jessica can survive is an excellent example of this. He shows the use of logic, but then proceeds to make intuitive leaps beyond logic.
