I actually don't remember that scene, I definitely have to re-read the series again.

Look at Alia as an example. She is only a few years older than the twins, and her possession didn't really begin until she was struggling with the position and power that her brother had placed her in. The stress allowed the Baron to penetrate her defenses. Abomination didn't start right away.

Jessica's mother was Mohiam, a very powerful persona and a very powerful Bene Gesserit, with her own motives and her own desires for the Atreides. It seems likely that Ghanima's defenses may not have held against such a powerful and devious personality. I think this is the reason they sought to protect her.
