Concordo plenamente com você quando afirma que "se soubermos também apontar as qualidades no texto do aprendiz, isso o motivaré cada vez mais a produzir e consequentemente a dominar as técnicas de uma escrita adequada".

Só apontar erros, e "de preferência com caneta vermelha", como lembrou a Fátima, é terível e só desestimula o aluno, que consegue ver apenas o que faz de errado e não os pontos positivos do seu processo de aprendizagem.
