For me, I think a lot would change. Don't take this the wrong way...I'm not suicidal or self-destructive. But, in general, I'm very dissatisfied with our current world. I could go on for days ranting about everything I think is totally screwed up, but I won't.

I think I would completely welcome a complete change in my world. Even without the immortality, the severe change would be welcome. I'd love to immerse myself in a new culture, society and concepts. With time becoming limitless, barring bumping into Rage or someone 'staking' me, I think I could eventually find some measure of peace. Just to be amongst people who actually think, who have been around a while...perhaps I could finally get away from everyone who only thinks of the current moment...instant gratification.

I don't believe that this would be the only way for me to be happy, but I could certainly grow to love it. I would happily adapt.

As for what would become of me? I don't really know. I'm already a pretty 'dark' person. So I don't think I'd have too much trouble learning to feed. But at the same time, I don't think I could allow that part to take over completely. Although, I firmly believe that there are people who are just better off dead...those ones I might have to eat just for fun. But otherwise, all things in moderation.

I don't remember where I heard it, but there was a saying that went something like, "All things are permissable, but not all things are healthy." That is more or less how I govern myself currently, and I don't think that would change. But it certainly might get explored a little more.
