Lemon Fluff Salad – katemarie_ia (TOH)

1 can lemon pie filling
1 (8-ounce) carton whipped topping
2 (11-ounce) cans mandarin oranges, drained
1 (14-ounce) can pineapple tidbits, drained

Fold pie filling and whipped topping together until well-blended. Fold in fruit. Chill until ready to serve.
Serves 12.

Mock Macaroons

1 Box Angel Food Cake Mix
10 oz. Shredded Coconut
1/2 Cup Water
Baking Cocoa (optional)

Preheat oven to 350 degrees. Mix angel food cake with coconut. Add water. Add 3-4 Tablespoons of cocoa if you want a little chocolate taste. Place parchment paper or foil (dull side up) on a large baking sheet. If using foil, spray with butter flavored nonstick cooking spray. Drop cookie mixture by slightly rounded teaspoons (measuring teaspoon, not teaspoon you eat with) 2 inches apart. Bake 10-12 minutes or until slightly golden. Let cookies cool before removing them from the foil. They should peel right off. Store in an airtight container.

Serves: 50 (2 Cookies Each)
