Subject: ABC Recipe Game

How about an alphabetical recipe game? Any recipes, like A for Anise Cookies, B for Banana Bread, etc. and then you post the recipe for them here. It keeps going till we finish the alphabet, then we could start over at A.

Posting diabetic/SF/FF recipes would be appreciated, but it's not a requirement for this game. Please state if it's a REGULAR recipe, not diabetic/SF/FF, so others can convert them or make suggestions to convert them, if needed.

Aunt Frances’ Pizza Wiches (regular recipe)

1 lb ground beef
1/2 C onion, chopped
1 lb Cheddar or Mozzarella cheese, grated
1 (10 oz) can tomato soup
1/2 tsp oregano
1/2 tsp chili powder
1/4 tsp garlic salt
1 loaf French bread

Cook ground beef with onion until done, drain grease. Add grated cheese, soup, oregano, chili powder and garlic salt to beef/onion mixture. Stir until cheese is melted. Slice French bread lengthwise. Spread beef/soup mixture on French bread and place under broiler until bubbly.

Basic Eggnog

6 eggs
1/4 c. sugar
1/4 t. salt
1 qt milk
1 t. vanilla
1 c. whipped cream, whipped

For uncooked eggnog, beat together eggs, sugar, and salt. Blend in milk and vanilla. Fold in whipped cream, if desired. Cover and refrigerate until well chilled

For cooked eggnog, beat together eggs, sugar, and salt in lg. saucepan. Gradually stir in milk. Cook over low heat, stirring constantly until mixture thickens and just coats a metal spoon. Stir in vanilla. Cool quickly by setting pan in bowl of ice or cold water and stirring for a few minutes. Cover and refrigerate several hours.

Cranberry Pear Pie

1-9inch pieshell
2 tablespoons all purpose flour
1/2 cup maple syrup
2 tablespoons butter, melted
5 cups sliced peeled fresh pears
1 cup fresh or frozen cranberries
Topping:
1/2 cup all purpose flour
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/3 cup cold butter
1/2 cup chopped walnuts

In a large bowl,combine the flour,syrup and butter until smooth. Add pears & cranberries; toss to coat. Spoon into crust.
For topping, combine the flour,brown sugar & cinnamon ; cut in butter untill crumbly, stir in walnuts.Sprinkle over filling.
Cover edges of crust loosley with foil to prevent over browning.Bake 400 for 15minutes.Reduce heat t0 350.Remove foil bake 35 - 40 minutes or until crust is golden brown and filling is bubbly.
Cool on wire rack.

Found this one on Taste Of Home forums. Contains SF and FF ingredients. It didn't say what size boxes of Jell-O and pudding or what size can of oranges, but I bet it is just the regular size boxes and an 11 oz can of oranges.

Dreamsicle Mousse – queenietwo (TOH)

1 box sugar-free orange Jell-O
1 box sugar-free white chocolate instant pudding
1 can mandarin oranges, drained
1 (8 oz.) container fat-free Cool Whip

Dissolve Jell-O in 1 cup boiling water. Add 1 cup cold water and let set for 5 minutes. Using electric mixer, beat dry pudding mix into Jell-O until well blended. Fold in mandarin oranges and Cool Whip. Chill before serving.

Variations: add chopped pecans, use strawberry Jell-O and fresh or frozen strawberries (thawed and drained), lime Jell-O and pineapple.

Easy Desert

1 can pie filling in an 8x8 pan. Sprinkle Jiffy cake mix over top. Drizzle 1/4 cup melted margarine over cake mix. Bake 25 minutes in 350° oven
Spice cake and Apple pie filling is good

GELATIN RIBBON LOAF

1 (3 oz) pkg lime Jell-O
1 (3 oz) pkg raspberry Jell-O
1 (15 oz) jar applesauce
18 double graham crackers
1 env Dream Whip mix
3 T confectioners sugar
1/4 tsp almond extract

Place dry lime and raspberry Jell-O in separate bowls, add 3/4 C applesauce to each flavor and stir until thoroughly blended. Place 2 double graham crackers, end-to-end, on a platter; spread with 1/4 C lime Jell-O mixture. Top with a layer of graham crackers and spread with 1/4 C raspberry Jell-O mixture. Repeat layers, ending with graham crackers. Prepare Dream Whip mix as directed on pkg, omitting the vanilla and adding confectioners sugar and almond extract before beating. Spread over top and sides of loaf. Chill at least 30 min.
Makes 12-14 servings.

Ham & Pineapple Kabobs :
1-1/2 ham chunks
8-oz can pineapple chunks,
save juice
2 tablespoons soy sauce
2 Tablespoons brown sugar,packed
1/8teaspoon ground ginger

Alternate ham & pineapple on skewers;
place in a 2 quart casserole dish.
Combined saved juice & remaning ingredients; pour over kabobs, turn to coat.Cover and marinate in refrigerator for 2 hrs.Grill or bake until hot about 10 minutes

Hot Diggity Dogs
Serving Size : 25    Appetizers         
36 ounces Hot Dogs -- (3 12-oz. pkgs)
1 medium Chopped Onion
2 cups Barbecue Sauce -- any brand
3 teaspoons Hot Sauce -- hot or mild as desired

Slice hot dogs into 1/2 inch thick circles; arrange hot dog pieces lying flat on baking sheets.
In a small mixing bowl, blend hot sauce with barbecue sauce.
Pour barbecue sauce mixture over hot dog pieces as evenly as possible, then sprinkle with chopped onions.
Bake at 350 degrees F. for about 20 minutes, or until hot and browned.
Serve with toothpicks to skewer individual hot dog pieces.

INSTANT SPICED TEA

1 C instant tea
2 C Tang
2 1/2 C sugar or 2 C Sugar Twin
2 pkgs instant pre-sweetened
lemonade (Kool-Aid)
2 tsp cinnamon
1 tsp ground cloves

Mix together. Store in air-tight
container. Use 2-3 teaspoonfuls
in each cup of boiling water.

Johnny Margetti Casserole Serves 8 - 10

2 c chopped onion
1 c sliced fresh mushrooms ( 1 can )
1/2 c chopped celery
1 small green pepper chopped
1 1/2 lb. lean ground beef

1 10 oz. can tomato soup
1 10 oz. can cream of mushroom soup
1 7 1/2 oz. can tomato sauce ( I've used a second can of tomato soup with good results)
1/4 tsp. pepper

8 oz. cooked pasta - shells, penne ( I've used any pasta I have, each one gives the casserole a slightly different taste)

1 1/2 c grated medium cheese
1 c grated cheese (2nd amount for topping) (I use what ever cheese, sometimes mixing them)


Brown meat in large pan
Add vegetables & cook till vegetables are tender
Add & stir well, soups, tomato sauce & cooked pasta
Stir in first amount of cheese
Adjust seasonings to taste
Pour into baking dish
Top with remaining cheese
Bake 350 degrees for 30 - 40 minutes

If in a hurry the baking step can be skipped. Serve directly from the cooking pot & sprinkle with cheese

Key Lime Pie
1cup grahm cracker crumbs
2tablespoons light margarine, melted
Artificial sweetener to equal 2tablespoons sugar
1 envelope unflavored gelatin
1 3/4 cup skim milk

artificial sweetner t equal 1/2 cup

Mock Macaroons

1 Box Angel Food Cake Mix
10 oz. Shredded Coconut
1/2 Cup Water
Baking Cocoa (optional)

Preheat oven to 350 degrees. Mix angel food cake with coconut. Add water. Add 3-4 Tablespoons of cocoa if you want a little chocolate taste. Place parchment paper or foil (dull side up) on a large baking sheet. If using foil, spray with butter flavored nonstick cooking spray. Drop cookie mixture by slightly rounded teaspoons (measuring teaspoon, not teaspoon you eat with) 2 inches apart. Bake 10-12 minutes or until slightly golden. Let cookies cool before removing them from the foil. They should peel right off. Store in an airtight container.

Serves: 50 (2 Cookies Each)

Orange Cranberry Scones with Spead

PREP TIME  20 Min COOK TIME  15 Min

Cranberry Orange Butter
1 1/2 cups butter (no substitutes), softened
1/2 cup fresh or frozen cranberries***
2 tablespoons confectioners' sugar
1/2 teaspoon grated orange peel

In a mixing bowl, cream butter.
Stir in cranberries, confectioners; sugar and orange peel; mix well.
Cover and refrigerate for at least 1 hour.

SCONES:
2 1/2 cups all-purpose flour
2/3 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup butter (no substitutes)
1 cup chopped fresh or frozen cranberries***
3/4 cup buttermilk

Meanwhile, combine the dry ingredients in a bowl.
Cut in butter until mixture resembles coarse crumbs.
Add cranberries.
Stir in buttermilk just until moistened.
Turn onto a lightly floured surface; gently knead 6-8 times.
Divide in half.
Pat each into an 8-in. circle.
Cut into eight wedges.
Place 1 in. apart on ungreased baking sheets.
Bake at 400 degrees F for 15-18 minutes or until lightly browned.
Remove from pans to wire racks.
Serve warm with cranberry-orange butter.



*** Note: 3/4 cup dried cranberries may be substituted for the fresh or frozen cranberries.

mix cake mix and pumpkin together. Spoon onto cookie sheet and bake at 350 for abount 10 mins. Also good as mini muffins.

Poor Man's Turtles

1 (1.7 oz.) Package Rolo Candy
8 Mini Pretzels
8 Pecan Halves

Preheat oven to 325 degrees. Place pretzels on a foil lined cookie sheet. Place 1 Rolo on top of each pretzel. Bake for approx. 4 minutes or until chocolate gets shiny. Remove from oven and gently press 1 pecan half into each treat. Cool for 10 minutes, then place sheet in the fridge to set.

Note: You can make more or less of these. I just make 8 at a time because that's how many Rolo's come in a package and this way I won't eat too many. At Christmas time I buy the individual Rolo's that you can find in the Christmas candy and make about 100 of them.

Serves: 8

1 cup peanutbutter
1 cup Splenda
1 egg
Mix all ingredients together.
Form into small balls.
Place on a cookie sheet & flatten with a fork dipped in cold water. Bake @ 350 till edges are golden...12-15 minutes.

QUICK COOKIES (No-Bake Cookies)

2 C sugar
1/2 C margarine (1 stick)
1/2 tsp salt
1/4 C cocoa
1/2 C milk
1/2 C peanut butter
3 C oatmeal
1 tsp vanilla

Combine sugar, margarine, salt, cocoa and milk; boil 1 1/2 min. Remove from heat and add peanut butter, oatmeal and vanilla. Beat well and drop by teaspoonfuls on waxed paper. Allow to harden.
Makes approx. 4 dozen.

Tuttie Frutie Punch
6 cups water
5 crushed bananas
5small cans orange juice concentrate
2 small cans frozen lemonade
1 46oz can pineapple juice
1 16oz unwseetened strawberries
1 (2 litter) bottle diet 7 Up

Combine all ingredients except 7Up. Freeze in plastic tub. Take out of freezer 8 hrs. before serving. Store in refrigerator.When ready to serve, cut up mixture into chunks.Put into punch bowland pour 7UP over thr mixture. Garnish wit kiwi or orange slices.

Upside Down Orange Puffs – salsarose (TOH)
2 T. butter, melted
1/4 C sugar
1 tsp grated orange rind
3 T orange juice
1 (4.5 oz) can biscuits

Combine butter, sugar, orange rind and orange juice, mixing well. Pour 1T orange mix in each cup of 6-cup muffin pan. Place a biscuit in each. Bake 400° for 10 min. Invert on serving dish serve warm.

1 onion, diced
1/4 cup butter

11oz can cut green beans, drained
11 oz yellow wax beans ,drained
11 oz sliced carrots,drained
8 oz pkg cheddar cheese
8oz pkg mozzarella cheese
Saute mushrooms & onions in butter until tender;add soups,
beans & carrots.Remove from heat ; spread into 13 x 9 pan.
Combine cheeses together, sprinkle on top.
Bake at 350*until bubbly , about 30 minutes.

WESTERN DRESSING

1 cup sugar (use less—maybe only 3/4 C)
1 cup oil
1/2 cup cider vinegar
1 teaspoon Worcestershire Sauce (use a little more)
1/2 cup catsup
1 tablespoon onion, grated or onion flakes
1 clove garlic, minced
salt to taste

Mix until smooth in blender. Makes about a quart.

"Xtra" Easy Spinach Lasagna

Extra-Easy Spinach Lasagna
From: Campbell's Kitchen
Prep: 20 minutes
Bake: 50 minutes
Stand: 10 minutes

Serves: 8
Cheesy lasagna becomes more colorful and flavorful with the addition of spinach and Prego® Fresh Mushroom Italian Sauce.

Ingredients:
1 container (15 oz.) ricotta cheese
1 pkg. (10 oz.) frozen chopped spinach, thawed and well drained
2 cups shredded mozzarella cheese
1 jar (1 lb. 10 oz.) Prego® Fresh Mushroom Italian Sauce (3 cups)
6 uncooked lasagna noodles
1/4 cup water

Directions:
MIX ricotta cheese, spinach and 1 cup mozzarella cheese.

SPREAD 1 cup pasta sauce in 2-qt. shallow baking dish. Top with 3 lasagna noodles and half the spinach mixture. Repeat layers. Top with remaining pasta sauce. Slowly pour water around inside edges of baking dish. Cover.

BAKE at 400°F. for 40 min. Uncover. Sprinkle with remaining mozzarella cheese. Bake 10 min. or until hot. Let stand 10 min.

TIP: To thaw spinach, microwave on HIGH 3 min., breaking apart with fork halfway through heating.

This is an old WW recipe as you can tell by how to count it at the end. I'm not sure how you would count it on today's WW, but it IS good. It's kind of the WW version of a Banana Split Cake.

(Jane's) Yummy Surprise - WW recipe

32 (2 1/2" sqs.) graham crackers, crushed
1/2 C margarine, melted
1 env. (4 serving size) lo-cal cook-type vanilla pudding mix
2 C skim milk
1 C Ricotta cheese (part skim milk)
1/4 C confectioners' sugar
1 tsp vanilla
2 C crushed pineapple, in it's own juice, no sugar added
2 T cornstarch
1 C strawberries
1 1/2 med. bananas, sliced
2 1/2 C whipped topping
1 box (4 serving size) artificially sweetened strawberry gelatin mix
artificial sweetener to equal 8 tsp sugar

1st Layer:
Combine the graham crackers and 1/2 C melted margarine. Mix well. Press into 9"X13" pan that has been sprayed with a release agent (Pam). Bake at 350* for 10 min. Cool.

2nd Layer:
Cook vanilla pudding mix with skim milk. Chill until thick, but not completely set. Beat Ricotta cheese with confectioners' sugar and vanilla. Combine with pudding. Spread over 1st layer.

3rd Layer:
Put pineapple and cornstarch in pan. Cook over low heat until thick and clear. Take off stove. Add strawberry gelatin mix. Stir until well blended. Cool. Add artificial sweetener. Add strawberries and bananas. Stir to combine all ingredients. Spread over 2nd layer.

4th Layer:
Top with whipped topping. Chill.

Makes 16 servings each providing:
1/4 Milk
1/4 Protein
1/2 Fruit
1 Bread
1 1/2 Fat
52 Opt. Calories

Zucchini Pie
4 cups zucchini sliced and quartered
4 eggs
1 cup biscuit mix
1 onion ,diced
1/2 cup Parmesan cheese
1 clove garlic 1/4 cup vegetable oil
salt & Pepper to taste
Combine all ingredients together in mixing bowl; spread into 13 x 9 pan.Bake 350* 45 minutes
