1 tbsp cornflour
2 x 375mls evaporated skim milk
6 eggs
2 tbsp sugar
1 1/2 cups cooked rice
18 dried apricot halves, diced
shake of nutmeg & cinnamon

1. Preheat oven to 180deg.
2. In a small bowl, make a paste with cornflour & 2 tbsp evap. milk.
3. In a large bowl beat eggs until frothy. Add remaining milk & sugar.
4. Stir cornflour paste into egg mixture.
5. Spray 8 cup casserole dish & add rice & apricots. Pour milk mixture over. Sprinkle with nutmeg & cinnamon.
6. fill baking dish with 3 cm water & place pudding dish in it. Bake 35-40 mins until set.
