SILVERBEET AND CHEESE POTATO PIE
2 medium potatoes, chopped
1 egg
1 cup self-raising flour
1 medium onion, chopped
8 silverbeet leaves, chopped
60g ricotta cheese
30g tablespoons grated tasty cheese
60g ham, chopped
1 egg yolk
1 tablespoon grated parmesan cheese
Boil, steam or microwave potatoes until tender, drain, cool. Push potatoes thorough sieve, stir in egg and sifted flour, turn onto floured surface, knead until smooth. Spray oil in pan, add onion, cook, stirring, until soft. Add silverbeet, cover, cook over high heat, stir in ricotta and tasty cheeses, ham and egg yolk. press half the mixture evenly over base of 20cm flan tin, spread with silverbeet mixture.
On floured surface, roll out remaining potato mixture large enough to cover silverbeet mixture trim edge. Spraywith oil sprinkle with parmesan cheese. Bake in moderate oven about 40 minutes or until golden brown.

Took some to work for lunch today .. it travels well and tastes even yummier when reheated!

Hi Delia

I made this recipe last night and it was a big hit with the family. The pastry is the best low fat pastry I have tasted and I am going to try it out with some different fillings.

I am laughing as I made it last night also.

Yes you can use the pastry with any filling. I have not tried with a sweet filling but I think if you added some sweetner it would be fine.
