This is a fun dish to make. It's called Menudo or "Little" because everything is cut very small (cooks quick) This is Latin and Oriental in flair

You'll need
--------------

1-2 potato peeled and diced small (1/4 inch cubes)
2-3 carrot diced as above
1 green bell pepper diced as above
3 stalks celery diced as above
1 small/medium onion diced as above
3-5 cloves garlic pressed and cut
1-2 tomato cut in shreds or diced as above
OR
1 small can tomato paste
if wanting meat
1/2 - 1 pound pork/chicken boneless diced in 1/4 inch cubes

1-2 tablespoon oil
pinch of salt (sea salt is best)
dash black pepper
1/3 teaspoon cayenne pepper
dash paprika
dash coriander

cut all vegetables into cubes about 1/4 inch. The tomato and garlic can be sliced. Make sure to keep juice of tomato since thats the sauce! Put oil in wok or large frying pan or large stock pan will work and make sure coated. Cook potato and carrots over medium-medium high heat until it slightly seems like it would be ready to cook alongside the rest. Remove from pan. Add more oil if needed. Cook meat and garlic together. Render the meat until it is no longer pink on pork and turns white on chicken. Add celery and green bell pepper and stir together. Add tomato if it seems slightly dry while cooking (if using paste add a little bit of water, don't make it into a soup). Add spices. Add more water to cover bottom of pan to give a steam effect. After it seems to start to boil a little add potato/carrots from before and stir together. Cook again to a slight boil then turn heat down to low and cover and simmer about 5-10 minutes stirring occasionaly. Stir before serving. Some people add brown sugar or a little honey in their concotions. My family add raisins or garbanzo beans as garnish. Serve with rice, bread, or tortillas. Enjoy!!!!
