I made a new WW recipe tonight. It is Cream of Broccoli, very easy and it came out great. One serving, 1 and ¾ cups only 2 points and very delicious and satisfying. Here is the recipe:

Cream of Broccoli Soup

Prep Time | 14 min
Cook Time | 20 min
Level of Difficulty | Easy

Ingredients

1 medium onion(s), chopped
1 medium garlic clove(s), minced
2 pound broccoli, tough ends removed, stems and florets chopped
4 cup chicken broth, or vegetable broth
1 cup fat-free evaporated milk
1/4 tsp hot pepper sauce
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste

Instructions

Put onion and garlic in a 2-quart saucepan with 1/4 cup water and simmer until onion is soft, about 10 minutes; spoon into large pot.

Add broccoli and broth to onion mixture and bring to a boil over high heat. Once boiling, turn down heat and simmer until broccoli is soft but still green, about 8 minutes. Do not cover pot while broccoli is cooking or it will turn gray.

Remove soup from heat and puree in batches in a blender until smooth. (Note: Be careful not to overfill blender to prevent the hot liquid from splattering.) Add evaporated milk and hot pepper sauce, and season with salt and pepper. Yields about 1 3/4 cups per serving.

I did well on this challenge. I am going to give myself a 10 since I tried a new thing everyday of this week. I am so glad we had this challenge. Bev suggested this one. I have read many articles suggesting that everyone should try new exercises and new recipes to prevent the body of getting used to the exercise routine and to prevent the taste to get bored, respectively. While reading the articles I always promised myself that I would try new things, but I never did! This challenge pushed me to try new things and I am so glad I that I raised to the occasion. I am very excited about the Spinning class I took last Sunday and can’t wait to do it again this Sunday. It doesn’t seem like I want to go to gym to workout for an hour, it is more like I want to have fun for an hour. Trying new foods has made me crave less sweet stuff and feel very satisfied.

Now for my reward I’ve decided that I am going to make myself a CD. I have gotten too many CDs lately that I only like a few songs on each. So I thought it was time to make one CD with all my favorite songs. So I will burn a cool CD for myself and will label it "Reward for Spring Countdown Challenge #2" so I always will remember it.
