I don't know if she could or not... too tall and not enough experience to work with an animal like that. Now then... how would we carry this out exactly and why steal the horses when we could very successfully buy them, make something out of them and sell them for much more? Simple. See, this business-horseracing-is costly to say the least. Do you know what my uncle did with the money he got for that one stallion? He invested it back into the farm, buying more horses and the sort. Of course, he kept some for his own use, but hey, with a farm of that magnitude, he has to keep buying and upgrading horses. However, if we let someone else do the work, let the horse's image get around and then steal him, export him out of Cascade Mountains and sell him with that superb racing record backing him, who knows how much we could get for him. No other place other than here will know the horse for isolation from one place to another. Anyways, that's just a rough idea. Unless you want to try and steal them and sell them here or you have yet another idea, perhaps?
