Concordo com você quando diz que consultar o dicionário constantemente durante a leitura de um texto é bastante irritante e pouco motivante e que os textos sim devem estar adequados ao nível do aluno. No entanto, um certo grau de dificuldade também me parece importante, até para que o aluno se interesse pelo conteúdo do texto, e, nesses casos, o uso do dicionário pode ser bastante útil.
Talvez i professor possa facilitar esse trabalho esclarecendo, como sugere o texto desta semana, o significado de algumas palavras. Mas não todas!
