PC-geeks seem to be into clock-chipping in a big way, and there are lots of resources - components and advice - around the WWW.

In particular, since your problem is heat (I assume you can accept the reduced total operating life of over-clocked chips), you need to cool them more effectively that a mere fan can do. Check out 'peltier' devices, which actually cool the surface in contact with the CPU in question. You'll need to match the size, and use a good thermal compound to connect the two, but it might stop the freezing.

I stress 'might'.

All this is total theoretical gibbering on my part, as I've never clocked a Mac (other than the G3 card in my 6500, done by s/w) in my life.
