Have you read Oscar Wilde's "The Decay of Lying." In it he argues that rather than art imitating life, life imitates art. Though it seems mostly an elaborate joke, there is some truth to it. Typically artistic trends have been "ahead" of the culture and have given a direction to the culture. I wonder to what degree art can function as an external mediator.
However, you are definitely right about this double bind intrinsic to art. Art demands creativity which is the lack of imitation but should also somehow represent something. I suppose then we can consider some degree of creativity in that art incorporates new models to make new expressions. It is all still very much imitative, but it is a shifting of style and subject.
