Haven't tried this one myself, but it sounds gorgeous, for a festive dinner..or just as a special treat etc.
Lemon Cream.
2 egg whites
275 mls of cream
Juice of 3 lemons
tablespoon of sugar.
Put everything into mixer and beat at high speed..In around 45 seconds you should have a mound of sharp,fresh tasting, light as feather cream.Put into parfait glasses- or refigerate if not serving straight away.Serve with wafer biscuits.. or any other type of fancy biccy would do I guess!
