Since we have people here from coast to coast and half way around the world and back...I just thought it would be interesting : ) But tell the truth! Here's mine...so very unexciting, but being alone here except for "the boys" I wasn't feeling inspired to cook.

Sliced tomatoes from the garden
Sweet & Sour Cucumbers, with salt 'n pepper
Fried potatoes, oooozed nicely with Katsup
Skim milk

Now yours please?

Somehow, what we eat is interesting to me. Now that I've discovered Diane doesn't like "hot" stuff, I know that the chili sauce just wouldn't suit her delicate tastes! Because it is HOT! I had fun reading Margaret's recipe post down below and kept thinking what is that? To one of the ingredients *grin*.

I didn't realise that you could move them.

I am now able be on her lots more and because I am, my hip is improving. It is the only time I sit down.

If you want something to warm you up in the cold weather, this is it:

Ingredients:

Meat (lamb, beef or mutton if you can get it)
Carrots
Swedes
Onions
Peas
beans
then fill the pan with potatoes.
It doesn't matter how much you put in each time, or just what you put in, change it each time you make it.

Put all ingredients into a pan (pressure cooker is much quicker, add water, not to much because you have to boil it away when it is cooked.

Add salt, pepper, or anything else i.e. garlic, herbs.

Bring to the boil and cook until the liquid has nearly gone stirring regularly so that it doesn't catch on the bottom.

If using a pressure cooker, just put enough water to just over halfway up the pan, bring up to steam and cook for 15 minutes.

When cooked, give a good stir so that the potatoes are breaking up and thickening it. You should be able to stand a spoon up in it.

Serve with boilded beetroot and/or red cabbage.

Did you decide what you were going to grow in your pots yet? I was just down the garden (holding Sam's paw just about cause he doesn't like to potty all on his lonesome don't ya know ~ silly boy) and thinking about you and your garden aspirations and hopes. I have daffodils out and hyacinths and primualas (and allysum *giggle*) and the daphne bushes are in flower and smell heavenly. :) Lots of wonderful stuff happening down here so hows about an update on what your next move will be??? Are you at the potty stage yet... you know the stage where you plant the pots (not the one where you go potty, nutty or otherwise that is ;) Wondering, wondering....

I Just got this recipe, doesn't it look good?
I also have a wonderful artichoke dip if anyone wants it, and a great new chicken dish with sun dried tomoatoes...very easy and delicious..... and it doesn't burn your little mouth Diane:)

2 pounds cook cubed chicken

3 packages cream cheese

alot of garlic

1/2 cup grated parmesean cheese

1 tbs. dried chives (more if you like)

mix in large bowl. it works best if you use your hands to mix it all up.

preheat oven to 375 degrees

1 box of favorite flavored crutons in food processor. (do not use bread crumbs, does not work well)
2 cans pilsbury cressent rolls
1 stick butter melted

cover work area with wax paper. Flatten cressent triangle and fill with cream cheese mixture. wrap cressent aroud mixture making sure there are no holes for mixture to leak out of. Make 16 'pillows'. Dip each pillow into melted butter and then into crushed crutons. place on cookie sheet about 1 inh apart. cook for 30-40 minutes, until pillow is golden.

This isn't the same as my handcream, dog polish, come furniture polish Kat but I can't find the notes I jotted down and this one does sound really good. If you try it please let me know. I will try and search out a few others as well - I have all my herbal books scattered all over my bed right now in fact and started searching through them early this morning for things of interest to us here but somehow Daniel and I ended up in a very deep discussion regarding the ice-age and how people survived back then with a little inter-planetery stuff thrown in for good measure ;-) so I am late getting on-line today ~ worth it though. :)

Here ya go...

Sweet Marjoram Furniture Polish

4oz 110gm beeswax
1 pint 570ml turpentine
12fl oz 350ml strong infusion of marjoram
1/2 oz 15gm olive oil based soap
essential oil of sweet marjoram (optional)

1) Grate the beeswax into the turpentine and leave to dissolve, which may take a few days. Alternatively, warm the beeswax and turpentine carefully over a flameless heat until the wax melts. Turpentine can easily burst into flame so it's safest to warm it over boiling water.

2) In a seperate pan, bring the infusion to boiling point and stir in the grated soap until melted.

3) Allow both mixtures to cool and then blend slowely, stirring until it resembles thick cream. Stir in a few drops of essential oil. Pour into a wide-topped container and label.

Leaves of mock orange, lemon balm, lemon verbena, or rosemary, or lavender flowers could be used instead of sweet marjoram.

This one really floored me (coming from a 12 year old). "Mathew (cousin of 13) is so lucky" and I waited to hear something about the game boy that Mathew owns that Daniel aspires for at Christmas but no... "He has his future all sorted out". Cousin Mathew is headed towards a career as a motor racing driver, in a family that is stongly into these sports he is doing very well so far. Who would have expected THAT comment?!!!? Where'd it come from and what is a mother supposed to say? Wow! Obviously there are things to be discussed with regard to this issue.... I thought they'd be a couple of years away but it seems not.

I'm floored..... off to think this one over very seriously.

My Pumpkin Soup (for Marlene)

This is my favourite pumpkin soup recipe - it has some body from the little bit of added spice, just the way I like it. :)

1.2kg buttercup
1 onion peeled and chopped
2 stalks of celery chopped
3 cups of chicken stock
1/2 - 3/4 tsp ground cumin
1/2 - 3/4 tsp ground coriander
fresh ground black pepper to taste
1 1/2 cups of milk

**Tip** The easiest way to get at the flesh precook the buttercup in the microwave. Make a hole first by cutting around the stalk (so it doesn't explode). For the above size cook on high for around 12 - 15 minutes, cut in half, discard seeds and scoop out flesh.

Put pumpkin flesh, onion, celery, chicken stock and spices in a saucepan. Simmer gently for 20 - 25 minutes (or till the celery is tender). Puree till smooth, add the milk, heat (but don't boil). Makes enough for about (roughly) 8 servings and freezes really well. :)

Warning - this recipe is for 5 pounds of potatoes. When granny made potato salad it was usually for a picnic or church pot luck and she needed all she made. LOL

5 pounds round red potatoes, skin on
1 doz eggs, cooked to hardboil
aprox 1 cup dill pickle relish
1 3-oz jar pimentos, chopped coarsely
1 large Vidalia onion, chopped rather small [If Vidalia's aren't available use the sweetest tasting onion available].
3-4 large stalks celery, sliced very, very thin and cut into smaller pieces [width wise]
Mayonnaise
White cider vinegar

Boil potatoes, skin on until fork tender. Cut into whatever size chunks your family prefers [mine prefers rather large chunks]. Let cool.

Stir in large bowl with 9 eggs cut into pieces, relish, pimentoes, onion and celery pieces. Now stir in enough mayonnaise [we prefer Hellmann's] until well covered. Add salt and pepper to taste. Taste, if you want it a little sharper tasting add a little vinegar. If you prefer it a little sweeter, stir in either sugar or honey 1 teaspoon at a time!!!!!

When to taste spoon into serving bowl. Arrange remaining sliced eggs on top and sprinkle with paprika.

It is best if left in the fridge overnight to let the flavors mingle. I also love it when I have some lefeover cooked bacon to either stir in or sprinkle on top. Yummy, yummy, yummy. Warning, NOT a diet version!!!!!

Lisa's very yummy Thai Chicken and Pumpkin dish (as mentioned by her some time back on AAB). I can't wait to try this one!!

1 small can of red curry paste, the brand is Maesri, it is 4 0z.

1 can of coconut milk, the brand is Mae Ploy it is 19 fl oz.

1 pumpkin, it is actually a squash, and you can get it at the Asian market, it starts with a "K" I will run to the store tomorrow and get the exact name, you have to use the right one or it will taste funny.

so, I add the curry paste into a frying pan
I add 1 can of coconut milk, make sure to shake it real good.
1 can of chicken stock
1 cups of water
10 lime leaves, you get these at the Asian market, mine come frozen, previously fresh.

I than let it simmer for about 15 minutes, stirring often.
than I add cut up pieces of chicken breast and I let it simmer, not to long because it cooks fast and dry chicken is not good, so really watch it, usually 10 minutes max then at the end, you had pumpkin, this is a challenge though, the pumpkin is very, very, hard and a pain in the butt to cut. In order to get it open, you have to drop it on the ground to open it, on some concrete and do it hard. then it will open, than you have to cut it up in small pieces and take the skin off, it is so worth all the work though, it is very creamy and has great flavor, I make Rob do it:) than you simmer it around 5-10 minutes, until soft but not mushy, it needs to be just so....

This dish is fantastic and I hope you love it to, do you like your food spicy or mild. if you aren't a big spice girl, than don't use a full can of red curry paste.

I will get the name of the pumpkin you need to buy today, if you get the wrong one the dish is not good, this meal makes a lot and it is easy... oh, and make lot's of white rice with it.

bear, but so worth it, only cook 5-10 minutes, don't let it get to soft, it
needs to be firm to soft... and don't eat the lime leaves, they are for
flavor only. I leave them in the dish for flavor.

I know I'm not a nice person really since I only come here when I want something (I can hardly even make it to AAB lately, let alone this site - drat you work!).

I was wondering if anybody had a recipe for a beef/steak and vegetable soup? I'm looking for a reasonably low fat recipe, yet still a thick and chunky soup please, I don't really like those watery/thin soups very much (gotta have something to fill my tum-tum up heehee). We've got a canned variety here which is just delicious, but costs $2.50 per can which adds up since I am trying to eat it every day or so. Also, I think home-made fresh soup would be even more delicious.

I've got a great recipe for a thick low fat chicken and creamed corn soup which you can add other vegies to if you like. Let me know if you want it and I'll post it here (I left it at home today sorry).

I would like to give the OFFICIAL chatabox seal-of-approval to Lisa for her Thai chicken and pumpkin dish!!! Lisa that dish is wonderful, BUT *G*..... I am breathing fire from it, LOL. Next time I think I might tone down the red curry paste just a smidgen ;-) ....just a touch *G* but really guys this dish is GOOD. What are the legal requirements in the USA to have a vehicle on the road? Also what are the legal requirements with regard to selling a vehicle (as in what paperwork must be in place and/or are there further requirements with regard to how "useable" the vehicle is)?

All that kind of thing and yes ;-) there is a reason behind this silly seeming question but before I fess up to it I may have a few others to toss around. *G* Thanks.

..I cleared the letter box and found a parcel there. A very special someone had me disolved in tears last night with her generosity, thoughtfulness and kindness. She knows who she is and I don't want to embarrass her by naming names but if I was to say that I now have a lovely pendent that was picked out for me especially as being suited to my interest in things herbal perhaps you could guess who it was. This is not the first time (and nor am I the only one) she has taken time and effort to be thoughtful and kind towards. In fact, thinking about this I'm just going to come right out and say it.... Kris you are a very special person. When Jacke posted that picture of you last week on AAB and called you a Boxer Angel she wasn't far off the mark at all. I recall other things that you have done in an entirely selfless manner to make other peoples lives a little brighter too. You are very special and I just wanted to take the time to say it out loud.

You really did make my night. Again - thank you and hugs!!

you have arrived - you *are* old!
First of all........let me say - this is Mack and Jacke's fault.
I used to love to garden and I kept my yard nice, puttering, planting, deadheading, watering, raking and sometimes killing myself with physical labor.
Then Mack came along.........much of the yard was mature - the foundation bushes and trees, the roses, the
groundcover.....he couldn't destroy most of that. But as far as planting all the annuals I used to do every spring, I haven't even tried for two years. It doesn't look too bad, it is kinda "park-like", nice and shady, mostly just needs watering, pruning and raking to keep it presentable. But it is........GREEN, and I miss all the pretty colors of flowers.

This is the part that Jacke started. With her swinging gnome. I love that little guy and I WANT ONE to hang under the Japanese Maples! I have been to every Wal-Mart within 50 miles, but no gnomes, swinging or otherwise :-(( But once I started looking at garden statuary and knick-knacks I discovered all kinds of neat stuff.

As for the *OLD* part..........I used to think that yards that had fake elves, deer, birdhouses and all that stuff were tacky and "old-lady" looking! But now I have a weathered copper dragonfly weathervane on a tall stake, copper dragonfly chimes with iridescent marbles in the body, a black wrought-iron Ladybug on another tall stake, a tin "3 holer" birdhouse nested in the ivy on the fence, a fake smiley face rock, another fake rock that says "Happy" and 5 little rocks painted by my neighbor (the artist) like ladybugs.
When we were camping we went scrounging for rocks - they have "better" rocks than we do around here. We had the
back of the Explorer full of rocks as big as we could manage.
So now, I have all my rocks, critters and "junque" scattered here and there amongst the bushes and trees and
groundcover. Mack can lift his leg on this stuff if he wants - won't hurt...........but I have to make a trip to Indiana and sneak off with Jacke's swinging gnome to make my backyard complete.

Hello!
Sorry I haven't posted lately, I have been busy with one thing or another! UGH! You know that point in your life when it seems *everyone* is getting married?? Well, we're there. My husband and I have been to 6 weddings so far this summer and he has participated in two. The wedding cake isn't helping either. *snif* I have been trying to keep up on all of the boards the best I can, but if I become addicted to just one more, I fear I will be out of a job and one less husband! LOL! Nedra, on the other hand loves it. She is perfectly happy to lie by my feet as I try to make the rounds on the boards. She's my sweet baby. She is doing well, and getting biiiiig. She weighs 55 lbs now and is 8 months old. She is going to be a monster. It is a good thing she is a sweetie pie or I'd be in trouble!

I miss all of you guys and I promise I will make it a point to post more often!

I'm excited. We just installed a dripper irrigation system so I can have a "Container Garden" in the backyard. I'm looking for ideas for things that do well in pots in full sun. A "mini tree" (probably a shrub that can be stripped at the base and made to look like a tree) some blooming shrubs and of course flowers. These pots will sit on a concrete patio, in full sun most of the day - so there is a lot of heat reflected off the concrete.
As I buy pots, I'm going to look for things on pedestals and will also place a couple on old metal chairs. I'm trying to minimize the "oven-effect" of pots absorbing heat right off the patio (a problem I've had with pots there before).
Even if you only have one thing you've had lasting success - it will help immensely.
We have hot summer weather made more comfortable by cool mornings and evenings. Rain from May to December is quite unusual around here. We're warm and dry, for the most part all spring, summer and fall.
I'm actually more interested in permanent type things for right now.......flowers can and will be planted annually. But I need "the bones" of the area done first. Flowers look even nicer when they're offset by "green".

I want any shade of purple (the deeper the better) and a bright or golden yellow (yellow roses are usually so pale when open - I want *COLOR*!)
My roses are for cutting, the bushes never look very nice in the yard (they are on a side yard) because I keep roses in the house as long as they are blooming, so I'm always cutting the blooms. I like Hybrid Teas for cutting (longer stems) and I want a high petal count. In our warm weather, the high petal count roses last so much longer.
I have had Angel Face (but it's too small.)
My tip for prolific bloomers to keep you in cut flowers all season are Mikado, a red rose with some gold hints when open - it's almost "neon" it's so bright. It is very healthy and has nice foilage too. My other best one is Broadway - a variegated golden/ yellow, pink. If you know what a "Peace Rose" is - this is very similar.

I'd like very much to open a discussion on eating / cooking vegetarian (I'm thinking Claudia and Barbara are both eating that diet so we may have to drag them over here). Auntie Em has been fighting a battle with 15 little (may as well be 50) pounds for the past few years. Seemed like when I hit forty my metabolism became a bottom feeder and I just can't seem to get those pounds off. Even ten pounds would send me into exultations of joy! I don't really snack much (except during bouts of depression I've been known to have a binge on Hershey bars), I have coffee and toast for breakfast most days (never a meal), grab a salad, or sandwhich for lunch, then eat a relatively normal meal for supper. Exercise isn't a problem, remember...I garden. I'm always out sweating, digging, stooping , wheelbarrowing, and then I go to my real job. So I'll have to attack this via diet (anyone want to be my weight loss buddy?). So I was thinking maybe a vegetarian diet might help me to lose? Any veggie eaters out there that can offer some advice? Recipes, or just offer some good weight loss advice that doesn't involve pills.

I have been worried about my dog, been spending way too much time on the computer looking at websites that scare me and generally worrying myself into a mess.
So today, I started pruning.......and the backyard is waist high in branches and dead leaves that will have to be cleaned up (and I don't have near enough bins to put them in).
It really takes my mind off everything except which is the proper place to remove a branch, which "5 leaf" spot on the rose branch will give it the best shape if I cut it there, shall I clean off the branches from the ground up or start on the top?
I feel better. But now I'm going to have all this debris around here until the ladscaping bins get emptied again (and they only pick *those* up every two weeks. I have a feeling my dog is going to have a good time spreading branches around the back yard!

I'd like to (belatedly sorry) welcome Carol (shhh don't tell but that's her real name ;) from the Backyard and also offer an apology to Karen. I have been so flat out this week with the extra dog in the house that my internet time has been limited somewhat. I'm so pleased to see you here and I do have a recipe to share with you (I'll see if I can dig up the file right now in fact). Things seem (touchwood) calmer around here now so maybe I'll have a little more time for my favourite boards and in depth topics too. :) If you'd like to take a peek at my rescue boy you can find a picture of him posted over on AAB, here's a direct link to them, Sam The Man. OK, my garden has exploded and I have more squash (yellow) and tomatoes than I know what to do with. Luckily, mu eggplant is toning down!I love to cook and develop my own stuff, here's one of them!

Eggplant and Squash casserole.

1 medium eggplant cut into 1" circles
1 small summer (yellow) squash or zucchini, grated
1 medium tomato or six to eight smaller plum type tomatoes (diced) - I leave the skins on.
1 small onion - chopped small
1 clove garlic - crushed
1 - 1 1/2 cups plain bread crumbs
1/4 cup parmesan cheese
1 tablespoon parsley
1/4 table spoon thyme
Shredded cheese (I like mozzarella) for top

oil or cooking spray
2 tablespoons butter

Slice eggplant and place slices in an oiled deep baking pan (4" sides work great). Turn over once to coat both sides and place under a broiler for ten minutes, turn and broil for another ten minutes.

While the eggplant is cooking, melt the butter and add the chopped onion. Sautee until onion is soft but not browing. Reduce heat a little and add garlic, squash and tomato. Stir and cook until squash starts to wilt. Add breadcrumbs, parslet and thyme. If too dry, add a bit of water - just a tablespoon at a time. Add Parmesan cheese and stir well. Remove from heat.

Take eggplant out of the broiler and set the oven to 350F and move rack to middle of the over.

Top eggplant with stuffing mixture and top with mozzarella cheese.

Bake until cheese has melted and begins to brown.

For all you horse lovers out there what can be done to deter the nasty horse flies? This was posted on the backyard, if you follow the link you'll be able to read the original post. Margaret as a horse riding instructor I was hoping that you might have some good ideas on this one, also I thought you might like to take a peep over on The Backyard :) - lovely ladies over there!

And that company would be Sony Play Station. Here's the scoop, my boys have a Sony Playstation (one of the original models) at least 6 years old. It has been a wonderful machine, been played probably daily for all of those years. About 6 weeks ago, it started losing power and you had to fiddle with the power cord where it went into the machine - the boys got it working and all was well, until they unplugged it to take it on vacation with them. It would not power up at all and it started making "sparking" sounds.

My 14 year old son decided last week to call Sony repair line, when the gentleman heard what the problem was he asked my son to call directly to the Customer Service Department at Playstation headquarters. Andrew left a message and heard back from them yesterday. The gentlman he spoke with asked a few questions and told Andrew that he didn't want him to try to use that machine again. They wanted us to send it to them so they could run diagnostic tests... Andrew was bummed until he was told that they were sending him a brand new model Play Station that he would recieve (probably) by Monday!!!! WOOOO HOOOO! I had told them they would have to wait for Christmas for me to buy them a new system. There were some excited boys at my house last night.

Andrew learned a valuable lesson about calling customer service - he handled himself admirably - he didn't sound angry, he was articulate... I was a proud mum!

If you're thinking of a system for your kids... I reccommend Play Station highly! The customer service is awesome!

In light of the recent article concerning a lawsuit about a boy who nearly drowned at a county pool, I had to write this. I visit the Water Works Park and various other places in the county regularly. I think the lawsuit is missing a BIG factor � Who was supposed to be monitoring the kids in the first place?

I was at Water Works, August 7. I arrived with my son just after opening. In the small child area, I counted about twenty children from older toddlers to about kindergarten age and just two counselors. At best, can one adult properly monitor ten young children? Only one counselor was remotely watching some of the kids. The other spent a large amount of time with her back turned and then lying about and not fully attentive. The kids were hanging on the climbing net and screaming, �help� as though they were in trouble. Neither adult did anything to help the lifeguards. The lifeguards were spending more time babysitting than monitoring the pool.

I have been going to Waterworks for three summers and I see these things every visit. Last summer it got so bad that I stopped going. The day care and camp kids are often so poorly monitored by their adults that Water Works can be unsafe. This is NO fault of the lifeguards who cannot do their jobs properly because of the inattention of adults responsible for children. I have actually watched counselors and teachers lie down, close their eyes and try to get a tan! I applaud these lifeguards. Their job is to try and prevent an accident and intervene if there is one � not to baby-sit. Do we expect the police who patrol our streets to baby-sit? No and neither should be expect those who police the pools to. To the woman I saw yesterday: I wonder how things would be if the parents or your director knew the poor care and supervision you gave these children? Would you have your job? If I could have gotten the number of where you work, I would have called you director.

The parents of the boy who near drowned have my sympathies. But were those who were supposed to be watching the buy truly doing so? If his care was anything like what I see all the time at Water Works or just at local parks, no. The lifeguards cannot watch every person at the same time and we must be those who first watch out for any child we have with us.

First let me say...*gag!*

Last evening in the course of my work duties I took one of our residents out to eat a meal at Kentucky Fried Chicken in Greensburg, IN. Put in our order and this "other" employee comes up hacks all over the cup my drink was supposed to go in. So I ask the employee who is supposed to be dealing with me if I can please have a "clean" cup for my drink. She says "why...? is that one dirty? *sigh* So I tell her since the other employee just hacked germs all over it probably not. But that isn't all.

So I get my cup replaced and we get our food and are eating, and I look to my left and the employee who just waited on me, is eating out of the salad bar with her hands...an olive here, a pickle there...I was very upset and didn't see the point in complaining to them as they all seemed "nasty." But I felt firmly that I should have had a refund on both meals. I'll never eat there again, and feel it is unsafe for others to do so. Maybe I should surf and find the K.F.C. headquarters and file a complaint (feeling very grumpy this morning).
