Subject: Chocolate Mouse...er Mousse-

275 mls of cream
350 grms of dark chocolate
4 egg yolks
i tablespoon of brandy
1 tablespoon of sherry.
Whip cream till it holds a peak.
Break chocolate and melt gently over boling water.Let it just melt completely, but gently, it it goes hard..Blamoh- no good. When the choc is in liquid state, put in mixer and beat hard on top speed till it goes cool and creamy
. When the chocolate is ready add the whipped cream to it and beat, then when that has amalgamated beat the 4 egg yolks into it. As it thickens beat in the brandy and sherry
This will make enough to fill 12 ramekin dishes.
If not to be eaten that day refrigerate.
THis is suberbly rich as served in the best French restaurants!
