Subject: Chocolate Pudding

3/4 cup SR flour
4 TBlspoons cocoa
45gm butter or marg
1/3 cup caster sugar
5 TBSpoons of milk
1 tsp of vanilla essence
SAUCE
1/3 cup of brown sugar
2 TBSpoons of cocoa
1 1/4 cups boiling water

Sift flour and cocoa into bowl. Cut butter into small pieces and mix into sifted ingreds. with sugar. Stir in milk and vanilla essence. Turn mixture into greased bowl and spread evenly.
Mix brown sugar, cocoa and water together until smooth then pour over the pudding mixture.
Bake in amoderate oven (180 C) for 35 minutes.

Sprinkle top with caster sugar and decorate with swirls of whipped cream, chocolate shavings and glace cherries.

That's all there is to it and it is lovely. I usually use normal flour and 1 1/2 tsp of baking powder and ordinary sugar works fine too and I generally forgo the topping - it's so good what's the point? :) **Fun to make with kids too** Just don't let them eat all the mix first!!!
