Sirloin is the most popular joint but any joint will do.

Wash and put into a roasting tin with about 1/2 to 3/4 of water in the bottom of the roasting tin. Cover with tin foil and put into a pre heated over to gas mark 5.

For each 1lb of meat, 20 minutes per pound and add 20 minutes i.e. 5 lb meat should be cooked for 2 hours. Adjust to how you want it. For rare, reduce the cooking and well done, lengthen the cooking.
