Subject: Carrot cake recipe (in case anyone else is a fan. :)

Easy Microwave Carrot Cake

2 cups of finely grated carrot
2 eggs
1 cup of sugar
3/4 cup of oil
1 tsp of vanilla
1 1/4 cups of flour
2 tsp of cinnamon
2 tsps of mixed spice
1 tsp of baking soda
1/2 a tsp of salt


Mix eggs, sugar, oil and vanilla in food processor till smooth. Add carrots and all other ingredients, make sure everything is combined but not overmixed. Turn mixture into a microwave ring pan, cover and microwave on high for about 9 minutes (till cake looks just dry and centre springs back, check it at around 8 minutes as microwaves vary). When cool turn it out and ice with lemon butter icing and garnish with chopped nuts (walnuts are nice. :)

Lemon butter icing (or frosting for my USA friends).

I Tbsp butter
1 1/2 Tbsp of lemon juice
1 1/2 cups of sifted icing sugar
optional - 1/2 a tsp of finely grated lemon rind

Place the butter, juice and rind (if used) in a bowl, microwave at high for 30 seconds (or until soft). Add icing sugar and mix with a knife till it's smooth and creamy. Spread on slightly warm (not hot) cake.
