Diane, Tri-tip is a thick cut of beef, sirloin I guess. Sort of a "roast size" steak. It is usually cooked whole and it takes 30-40 minutes to grill (as opposed to just a few minutes for a regular beef steak). I like to let it sit for 15 minutes or so, then cut into thin slices, sprinkle with vinegar, salt and pepper and cumin, also some garlic of course!
