I just use a normal medium cheedar type cheese Marlene as that's what we usually have in the house but it's really better with a mozeralla, parmesan and whatever mix. Got to get that stretch and bite in there. :)

This is a nice meal to have with a lot of salad and bread (or potatoe) which does help cut down on the meat part of it and as I said it does freeze well and reheats well in the microwave. A few times after a long day out somewhere it's been a lifesaver to pull a couple of portions out of the freezer and zap them well throwing a salad together - instant homecooked food. :)
