Cabonnosi is just a slightly spicy sausage that is better simmered to warm through (it's a smoked sausage BTW) than it is fried (my husband would beg to differ being a male ...fry, fry, fry it BUT he gets what arrives on his plate ;). Silverbeet is chard I just looked it up. :) Isn't it funny how all these things have different names? Anyway I just add a little water (generally what is still clinging to the leaves after washing them) chop roughly and nuke it in a covered bowl for a few minutes (not too long). A little grated nutmeg added can bring out a nice flavour but I tend to serve it with more fatty type meats and I like the sharp flavour contrast. :)

There you go Melissa - not too witch like right? *giggle*

Diane.
