Subject: Jello/Cucumber salad - good with fish

This is not as sweet as some of the molded salads we've been talking about.
1 small pkg lime or pineapple jello
dissolved in 1 cup boiling water - stir well to thoroughly dissolve the jello.
Add another cup ice water and chill until the consistancy of "thick" honey.
Whip jello(with portable mixer)until frothy.
Beat in 1/4 cup mayonnaise
Fold in 1 container cottage cheese
1 small can *well-drained* crushed pineapple
1 peeled grated cucumber (I like to do this first, grate directly onto a few sheets of paper towels, roll the cucumber and let it wick most of it moisture into the paper
towel - otherwise the liquid from the cucumber tends to "weep" out of the sald when leftover.)
We like nuts in everything! So I add about 1/2 cup chopped walnuts.
