It comes from the Jewish roots as passover in the old testament. When Christ came, he broke unleaven bread and offered wine and said "do this in remembrance of me." Therefore we do it out of obedience in rememberance of Christ. But, it is a symbol. When we take it (although we don't believe it becomes actual blood and body) we do it believing it gives healing of the soul and body and it reminds us of what Christ did for us when he died on the cross. (did that answer your question, or did I misunderstand?) :)
