This was given to me by a friend and lady I worked with. She was a born and bred Texan and a wonderful cook. The recipe was said to be the one used at the LJB ranch in Texas, where former US President Lyndon Johnson gave large (and famous) barbeques.

TEXAS BARBECUE SAUCE

Start with approximately 1/4 cup fat trimmed from the meat used. Add a small amount of water and render this down for about 1/2 hour.
Use 1/4 cup of above rendered fat (I know..it's not good for you but it's one of the things that makes this sauce rich and special.)
1 1/4 cup catsup + 1 Tablespoon Tabasco sauce
1/2 cup worcestershire sauce
1/3 cup fresh lemon juice (I have used bottled w/no problem)
1/4 cup water and 1/2 cup onion pureed together in blender
1/4 cup firmly packed brown sugar
Combine and simmer about two hours. Stir frequently to keep fat blended in.
I have made this for neighborhood Christmas presents. Put in a little canning jar, trim the lid with a circle of plaid holiday fabric and tie with a bow. I always make a little hang tag and note that the recipe has fat in it and should be refrigerated and enjoyed soon.
