No actually I like the way they look, all nice and round and crispy all over, I bake them in deep muffin tins to which I will add either a little butter or a little of the pan drippings - both work and you don't need them to be swimming in it, they are going to be covered in and dipped, dunked and otherwise drowned in gravy after all. :)

Very simple recipe for them;

3oz of flour
1/3 of a tsp of salt
1 egg
1/2 a pint of milk

Sift flour and salt together. Make a well in the centre of flour, break in the egg, then add sufficient milk to make a thin batter. Beat well, cover, and allow to stand for at least an hour (not likely in my house, LOL, but a handy thing for Christmas day). Place 2 tabelspoons of dripping in a pan or pie-dish, heat until smoking hot. Pour in the batter and bake about 1 hour at 200c (400f).

But I add about a teaspoon of fat per muffin pan and then spoon the batter in evenly - this recipe does 6 perfectly for me in my muffin tins. The cooking time is much shorter too since they are smaller - about 20 minutes I think from memory. I just watch for them to puff right up and get to the point I like them at. :)

Very simple, very yum and perfect with roast beef, gravey and don't forget the horseradish! (Andrew hates it but I love it! :)
