I *do* know exactly what you're talking about - how fast it shows on a small woman. I had (now ex) a SIL that was almost 6 feet tall - she could gain forty pounds and still camouflage it with no problem.
Jacke, here are 3 potato dishes I have used when dieting (just for me - family might not like them)
1. Smashed potatoes use very little oil to make a warm crisy/creamy satisfying potato. If you didn't see the recipe I posted a while ago, just ask and I'll get it to you.
2. Bake a large potato and slice in half and score the surface by scratching with a fork - cover each half with a lightly cooked "over easy" egg. Use some salt and lots of pepper. The yolk runs down into the egg sort of like melted butter.
3. Bake a large potato, slice in half - prick many times with a fork and sprinkle with a generous amount of seasoned vinegar. Eat warm or cold.
For me........I can't deal with lots of exciting, fancy spa type food when I'm dieting. Since I'm the one that has to find the recipes, shop for the food and prepare it - it gets me too excited and thinking too much about food.
Also, I go for something that I know will satisfy me (ie this is usually some fat, starch or sugar that gets in your bloodstream)like the grape nuts, I talked about earlier. Don't taste that great, but they satisfy and my brain can go on to something else instead of the cravings going on in my body.
Sadly, for me, I have to suffer when I'm dieting.......I have never found that magic food that keeps me satisfied without me being hungry. I just know where my real weaknesses lie - and try to handle those.
