Kumara and vegitable casserole.

Kumara (kuma sounds like boomer as opposed to summer - then a is in "a la" ....got that folks? Hee, hee, hee - a little lesson in native NZ before we begin. Kumara is sweet potatoe by any other name. ;-)

The recipe says to vary the veg as preffered (or avaliable) but that it's best not to leave out the kumara.

750gm kumara
2 onions
750gm courgettes (zuchini for you northern folk ;)
2 medium eggplants (aubergines right?)
500gm green beans or broccoli
4 tablespoons of butter
1 can tomatoe puree
3 cups of grated cheeses (or more)
salt and pepper

Peel and slice the kumara and onions, slice the other veg. Put 1 TBLSP of butter in the bottom of a casserole and layer a third of the veg on top, pour over a third of the tom. puree and a third of the cheese and some S&P. Repeat twice, finish with cheese and the rest of the butter. Cover and cook in 210C for 2 hours. (I cook at a lower temp as my oven is a thermowave and heats quickly). If it dries out add a few Tblsp of water. Serve hot or cold.

It says it serves 6 but I think it would do more than that perhaps. I've made this before but mucked around with it. It's pretty simple (like a potatoe bake) and Andrew and I both like it for dinner and Andrew also enjoys it for lunch the next day. Something simple to chop and change as it suits you. :)
