This recipe was given to me by a friend who's from Texas and is a wonderful cook. It is supposed to be the BBQ sauce used at the LBJ ranch in Texas (he was a US president.)

TEXAS BARBEQUE SAUCE

Start w/approximately 1/2 cup of fat from meat used. Add small amount of water and render this down for about 1/2 hour. (I know, we're supposed to trim off and discard the fat - but it adds richness.)

1/4 cup of the above rendered fat
1 1/4 cup catsup and 1 Tbl. Tabasco sauce
1/2 cup Worcestershire sauce
1/3 cup fresh lemon juice
1/4 cup water and 1/2 cup onion (puree in blender)
1/4 cup firmly packed brown sugar


Combine and simmer until thick - about two hours. (Stir often to blend in fat.)

Now, stand back and wait for handsome men to enter your kitchen - works everytime!

I like to give this for gifts at Christmas time in little mason jars with a circle of Christmas plaid and a pretty ribbon around the lid. (But you should mention it needs to be refrigerated because it has fat in it.)
