I don't have a proper recipe for Potato Soup - it's just a comfort food I have been eating since I was a child. I found a proper recipe on the web that sounds like mine so I'll put it here:

Thick Potato Soup

5 or 6 potatoes - diced
1 large onion - diced
1 or 2 stalks of celery - diced

1/2 cup butter
3/4 cup flour
1 1/2 tsp salt
1 1/2 tsp pepper

6 cup milk

Boil first three ingredients in just enough water to
cover until fork tender. Make a roux from the butter
and flour. Add milk, salt, and pepper. Cook until
thickened and add to vegetables and water.
Bring to simmer and serve warm.

I'm not quite sure how *thick* this really is. Mama used to make it with no flour and I like it that way too - but most people like it slightly thickened. I really hate it when it's as thick as gravy. I like to serve it with a pat of butter and parslay floating on top - I also like to add finely sliced green onions at the end. You can add 2 cans diced clams and call it "Clam Chowder".
