This is traditional at our house on Christmas morning.

Strawberry Jam Scones

2 cups unsifted flour (fork stirred to aerate before measuring.)
2 tsp. baking powder
1/2 tsp. salt
2Tbls. sugar
1/2 cup butter
1/4 cup chopped dates or currants
1 egg
1/2 cup heavy cream
1 egg white slightly beaten
Strawberry Jam

In a medium mixing bowl thoroughly stir together the flour, baking powder, salt and sugar. With a pastry blender, cut in the butter until the particles are fine. Stir in the dates or currants.
In a small bowl, mix with a fork the egg and cream until they are blended. Add to the flour mixture and stir with a fork until the dry ingredients are well moistened.
With the hands, form the dough into a ball and turn it out onto a lightly floured board. Pat it with your hands into an 8 inch round about 1/2 inch thick. Brush the top with the slightly beaten egg white, sprinkle with sugar. Cut into wedges (about 8). With your thumb or the back of a spoon, make an indentation in the broad section of each wedge. Fill each indentation with strawberry jam.
Bake in a 400* oven for about 15 minutes.
Serve with extra strawberry jam. They are so rich that spreading them with butter is not necessary.

Now for the real truth...........
That is the way I used to make them and they are delicious. But then I discovered Krusteaz Scone Mix and it is almost as good and easy and quick! I prepare according to the directions on the box, add Craisans (dried cranberries) and sprinkle the tops with sugar.
