For all I know this is some kind of a traditional Italian potato anti-pasto - but I had never heard of it. I had it at a luncheon where a buffet was served (at an Italian Restaurant). I really like it and thought my husband would too, so I tried it at home and it's fast, easy and lighter than your traditional Potato salad (which by the way *must" have sweet pickles in it according to the Big Guy.)

Italian potato salad.

Several red potatoes boiled whole (with the skins on) and sliced into 1/4 inch slices.
Tomatoes coarsely chopped
Green onions (thinly sliced) or finely sliced red onion rings
Green and Red Bell peppers

Layer on a plate or platter (rather than putting in a bowl)

Drizzle with your favorite home-made or bottled Italian type (oil and vinegar) salad dressing.

Cover with plastic wrap, chill and marintate.

I like to serve that with a tri-tip I have grilled and sliced - you have your "meat and potatoes" meal but it's light and easy on a hot day.
