Russian Borsch

I use a tomatoe juice and beef broth as the base, left over meat (anything), canned vegetables (beans, green beans, corn, carrots, whatever you have laying around - you can buy "VegAll" this is a brand of canned mixed veggies), canned beets, 1 garlic clove, salt, pepper, onion pwoder, and just wing it! It's more fun that way because every pot is different!

Serve with one tbs of NonFat Sour Cream in the bowl!

I got this recipie from a guy that I work with. Both he and his wife are directly from Russia and this is their version of borsch. Yummy, yummy, yummy!
