Lisa's very yummy Thai Chicken and Pumpkin dish (as mentioned by her some time back on AAB). I can't wait to try this one!!

1 small can of red curry paste, the brand is Maesri, it is 4 0z.

1 can of coconut milk, the brand is Mae Ploy it is 19 fl oz.

1 pumpkin, it is actually a squash, and you can get it at the Asian market, it starts with a "K" I will run to the store tomorrow and get the exact name, you have to use the right one or it will taste funny.


so, I add the curry paste into a frying pan
I add 1 can of coconut milk, make sure to shake it real good.
1 can of chicken stock
1 cups of water
10 lime leaves, you get these at the Asian market, mine come frozen, previously fresh.

I than let it simmer for about 15 minutes, stirring often.
than I add cut up pieces of chicken breast and I let it simmer, not to long because it cooks fast and dry chicken is not good, so really watch it, usually 10 minutes max then at the end, you had pumpkin, this is a challenge though, the pumpkin is very, very, hard and a pain in the butt to cut. In order to get it open, you have to drop it on the ground to open it, on some concrete and do it hard. then it will open, than you have to cut it up in small pieces and take the skin off, it is so worth all the work though, it is very creamy and has great flavor, I make Rob do it:) than you simmer it around 5-10 minutes, until soft but not mushy, it needs to be just so....

This dish is fantastic and I hope you love it to, do you like your food spicy or mild. if you aren't a big spice girl, than don't use a full can of red curry paste.

I will get the name of the pumpkin you need to buy today, if you get the wrong one the dish is not good, this meal makes a lot and it is easy... oh, and make lot's of white rice with it.

like. I get them at the Asian market and at the grocery store. cutting is a
bear, but so worth it, only cook 5-10 minutes, don't let it get to soft, it
needs to be firm to soft... and don't eat the lime leaves, they are for
flavor only. I leave them in the dish for flavor.
