Can I come to *your* house for leftovers?? Yes, it is pretty spicy, that's why plain white rice goes so well with it. I also think a dollop of sour cream on the plate would be good (you can see the mexican food influence in my thinking - tone down spicy hot with sour cream).
I'm so glad I got to taste it, that helps so much when you try to recreate it in your own kitchen. I'll try it and use Butternut squash like you did and let you know if it is just too far off the mark to come up to Lisa's strong recommedation for the proper pumpkin.
