That's the stuff I promised to post the recipe of for you. Obviously you know it though (and I haven't been able to find my favourite version of it) but it goes something like this.
(Very rough guide). Take your soaked and softened bulghur, drain and squeeze really well, add olive oil, lemon juice, loads of finely (very finely - I do it in the food processor) mint and parsely, tomato chunks, spring onions, pepper (I like garlic salt too) cucumber I think (maybe a few olives - but then I'm mad on olives. ;)

....I know I'm missing some stuff here but I usually only make this in the summer.... I may be back to this. But it's one of those - toss in to taste things, basically just the cracked bulghur, mint and parsley is what's most needed.
I LOVE this stuff - I would be MOST likely to go vegetarian on a diet of this. :)) YUM - I may have to add it to winter fare as well!!

I think you're right on the couscous too - I think I may have seen polenta somewhere in a cook book and the concept of being able to fry it if you like it that way. Thanks. :)
