Subject: Celery, mushrooms and rice

2 tablespoons butter (margarine)
2 cups chopped celery
6 ounces canned mushrooms drained (I use about 8oz fresh)
1 tablespoon soy sauce
1 teaspoon ginger
1/8 teaspoon pepper
1 tablespoon cornstarch
1 tablespoon water (or broth)
1/2 cup beef or vegetable broth
2 cups hot cooked rice

In a large skillet melt butter; add soy sauce, ginger and pepper. Mix thoroughly. Cook celery and mushrooms till desired tenderness. Mix cornstarch and water. Stir cornstarch mixture and broth into celery and mushrooms. Cook, stirring frequently until mixture thickens. *If you like more sauce add another tablespoon of the cornstarch mixture and another 1/2 cup broth.* Spoon over rice.

I've been told this is really good when I toss in shrimp or pork also. So if someone really wants the meat you can add it. I also make more rice than the recipe calls for - can always use it in something....
