With a youngster I use sugar lumps, but these are only given when
training, at no other time.

When training from the saddle the reward is to stop doing the movemnts
i.e. when you are trying to get a horse on the bit, his reward for doing this
ins to give him the rein, (lengthen the rein) so that he can stretch his
neck. During breaks or when the session is over, he will be given a treat
such as a sugar lump or polo mint.

If he works exceptionally well, the training session will be cut short and he
will go out on a hack.

Clicker training is just another way.
