Marinated Pork loin w/Mustard Sauce

Marinade
1/4 cup soy sauce
1/4 cup bourbon
2 tablespoons brown sugar
Marinate tenderloin at least 4-5 hours (overnight is better)
Bake at 325 degrees F for 1 hour (uncovered)
or grill 15 minutes on each side
(Use some salt and pepper before cooking)
Mustard Sauce
1/3 cup mayonnaise
1/3 cup sour cream
1 teaspoon dry mustard
2 teaspoons vinegar
chopped scallions

To serve slice tenderloin diagonally and either pour sauce over or serve separately.



Steak and Black bean chili
2 pounds of stew beef
2 tablespoons Chili powder
1 teaspoon barlic powder
1 teaspoon ground cumin
1 large onion chopped
1 green pepper chopped
2 cans (15 ounces each) black beans (drained)
2 cans (14-15 ounces) Chili style chopped tomatoes
1 teaspoon white sugar
1 6 ounce can tomato paste
salt and pepper

Place cubed beef in slow cooker on low add spices and all ingrediants except the tomato paste. Cook on low 8 -10 hours. Add the tomato paste and stir. May be served with sour cream and shredded cheddar.

Chicken Gorgonzola

6 boneless skinless chicken breasts
2 tablespoons olive oil
1/4 cup butter
1/2 cup finely chopped green onion
1 garlic clove minced
1/4 cup flour
pepper
1 cup chicken broth
3/4 cup heavy cream (or 1/2 and 1/2)
2 teaspoons Worcestershire sauce
1/4cup crumbled Gorgonzola or blue cheese plus extra for topping

Cook chicken in the olive oil in a skillet for 8 - 10 minutes. Remove skillet from heat - cover and keep warm. Melt butter in saucepan add green onions and garlic - cook until tender. Stir in flour and pepper add the broth and cream and worstershire sauce. Cook over medium heat until thickened and bubbly stirring constantly. pour over chicken in skillet and mix well. Stir in the cheese and serve with the sauce. Crumble more cheese over top if desired.
