Paul let the Jihad go on for ten long years, he knew the way out involved Chani's death and that was something he wasn't ready for or allowed.

Paul was scared at heart, he had as you say all the best training, the best role models etc, but when it came down to doing what had to be done he was guided only by his heart.

He knew that the path he had to follow involved his having a child, a child with a destiny. He also saw how having that child would be the end of Chani.

By allowing Irulan to continue preventing Chani to conceive, he knew that she would die from giving birth due to the spice diet.

So after 10 long years of the Jihad he finally accepted what must be and he allows Chani to conceive.

I don't believe Paul was ever faced with the sandtrout skin question personally. His destiny was to have a child who would lead to the golden path. Remember Pauls visions weren't always totally accurate there were things he could not see or do. But he did know that the answer lay within his child (surprise paul you have a son too :-)

Leto and Ghanima were much more powerful (Ghani's powers are not unleashed due to lack of spice intake) Leto's were when heightened when his father had him tested in the desert to make sure he was truly the one.

Even then Paul wasn't sure that Leto should take on the sandtrout skin, could not bear to lose his child like that because of his overpowering weakness... Love.

I guess what I'm trying to say is yes in ordinary battle Paul shone like a knight, he battled hard and fought well. But when it came to doing what had to be done he could not, he could not give up those he loved. he chose to let a jihad wage on for 10 years and let people die rather then do what had to be done.
