Subject: Diane - Granny's potato salad

Warning - this recipe is for 5 pounds of potatoes. When granny made potato salad it was usually for a picnic or church pot luck and she needed all she made. LOL

5 pounds round red potatoes, skin on
1 doz eggs, cooked to hardboil
aprox 1 cup dill pickle relish
1 3-oz jar pimentos, chopped coarsely
1 large Vidalia onion, chopped rather small [If Vidalia's aren't available use the sweetest tasting onion available].
3-4 large stalks celery, sliced very, very thin and cut into smaller pieces [width wise]
Mayonnaise
White cider vinegar

Boil potatoes, skin on until fork tender. Cut into whatever size chunks your family prefers [mine prefers rather large chunks]. Let cool.

Stir in large bowl with 9 eggs cut into pieces, relish, pimentoes, onion and celery pieces. Now stir in enough mayonnaise [we prefer Hellmann's] until well covered. Add salt and pepper to taste. Taste, if you want it a little sharper tasting add a little vinegar. If you prefer it a little sweeter, stir in either sugar or honey 1 teaspoon at a time!!!!!

When to taste spoon into serving bowl. Arrange remaining sliced eggs on top and sprinkle with paprika.

It is best if left in the fridge overnight to let the flavors mingle. I also love it when I have some lefeover cooked bacon to either stir in or sprinkle on top. Yummy, yummy, yummy. Warning, NOT a diet version!!!!!
