How dare my sister call on the mobile and crash my computer just when I had finished typing up a storm merely to check on "our" dog!!! Hmmmpppffff! Here we go (second try)....

To make a really excellent soup of the old fashioned farmhouse variety one must first make a really excellent stock (*G* - don't I sound flash? ;) To do this one must purchase (or recycle) bones! For a beef broth bones containing marrow (and cut small enough to fit in your largest pot) are ideal. Brown them under the grill first for the best flavour (drain away any fat that accumulates) add them to the pot and add veggies such as roughly chopped onions (skin on for good deep colour), celery (leaves are fine - why waste them after all?) roughly choped washed carrots, herbs of choice, peppercorns. Simmer for several hours, cool, skim off fat, strain and discard veggies and bones and there you have it - the starting point of soups extrodinary!!! :) From there you add your choice of veg, meat, pasta, grain - whatever tickles your fancy, tart it up with some extra herbs if desired, salt and pepper to taste, add a dash of dryish sherry for a fuller body (the soup - but maybe you too. ;) Left over roast chicken carcasses make wonderful chicken stock made in a similar manner but they can be broken up and zapped in a large microwave proof casserole dish - more manageable proportions.

When done freeze in suitable sized containers - nuke and enjoy. :)

Home made stocks are long in the cooking and kind of rustic but so worth it cost wise, taste wise and the satisfaction level is pretty high too when you make something from start to finish. :) Healthy too - no preservatives!

C'mon over Jen and we'll "stir the vat" together and share a wine while we wait for it to cook. :) Sounds like fun!
