My most favorite type recipe is:
Take stew kettle of beef bones, preferably cracked so all the flavor of the marrow will cook out, cover with water. Add a couple of carrots, onions, some parsley, thyme and a couple of basil leaves. Boil until it is brown and icky looking with all the stuff floating on top [sorry about the description but that is how I figure out if my broth is done yet]. Scoop out all the bones and cooked veggies and strain.

Taste broth, add salt and pepper to taste. Now take a cheap cut of meat, cut into whatever size chunks you like to see in your stew. Put into the broth and simmer on low until meat is tender [a crock pot is wonderful at this point]. When meat is almost tender throw in whatever veggies you like in your soup AND a couple of potatoes suitable for making mashed potatoes and 3-4 cloves garlic, whole; can also add 2-3 tablespoons tapioca to the broth. Cook until veggies and meat are tender. Remove the cooked potatoes and garlic. Drop into the blender with some skim canned milk. Buzz until liquid. Stir back into the stew. Heat until just before boiling.

Makes a nice thick stew. If you like it thicker add a little more tapioca to the mixture. The instant varities cook in a minute or two. Serve with cornbread or homeade pesant bread. With cold wine or a cold beer to die for!!!!!
