My Pumpkin Soup (for Marlene)

This is my favourite pumpkin soup recipe - it has some body from the little bit of added spice, just the way I like it. :)

1.2kg buttercup
1 onion peeled and chopped
2 stalks of celery chopped
3 cups of chicken stock
1/2 - 3/4 tsp ground cumin
1/2 - 3/4 tsp ground coriander
fresh ground black pepper to taste
1 1/2 cups of milk

**Tip** The easiest way to get at the flesh precook the buttercup in the microwave. Make a hole first by cutting around the stalk (so it doesn't explode). For the above size cook on high for around 12 - 15 minutes, cut in half, discard seeds and scoop out flesh.

Put pumpkin flesh, onion, celery, chicken stock and spices in a saucepan. Simmer gently for 20 - 25 minutes (or till the celery is tender). Puree till smooth, add the milk, heat (but don't boil). Makes enough for about (roughly) 8 servings and freezes really well. :)
